Author Notes: Martin Philip is the head bread baker at King Arthur Flour in Norwich, Vermont. He holds a degree from Oberlin Conservatory and is a MacDowell fellow. He lives in the hills of Vermont with his wife, Julie Ness, his three sweet children, and two chickens.
